Yummy Veggie Soup

ok what to make a yummy soup. something like roasted peppers other roasted veg.?

my question is what is the method to roast them and what do you do next. do you just throw them in some stock and blend or what. also my oven is fan so what temp do i put at and for how long. what do i add to it just oil and garlic s&p. any full recipes with method please help.

Ha, i just answered this to someone elses question, i’ll paste it for you: i like to roast a big pan of veggies and blend them into a soup. Just cut everything to about the same size and drizzle with olive oil, salt and pepper. I usually use a red bell pepper, a tomato, an onion, a few garlic cloves, a yellow squash, zucchini squash. Bake at 350 degrees for about 45 minutes, till everything starts shrinking and browning. Then let it cool, throw it in a blender or food processor and make soup. You can also add a package of cream cheese to about 2 cups of it and make an awesome dip……………… No need to add stock, it will be thin enough. I’d use about 1/4 cup olive oil and 1/2 teaspoon each of salt and pepper, you can always add more at the end to your liking………. After you blend it heat it back up
