Vegetarian Thanksgiving Recipes?
My aunt is having thanksgiving, and she isn’t making anything vegetarian, so I need some veg. thanksgiving recipies.thanks!
You could make a stuffed acorn squash. I made this last year and it was fairly quick and easy.
Stuffed Acorn Squash
1 slice whole grain bread
4 sesame seed crackers
1 tablespoon extra virgin olive oil
1/2 cup finely chopped onion
1 stalk celery, chopped
1 clove garlic, finely chopped
4 ounces smoked tofu, diced
1 cup cooked brown rice
1/4 cup seedless raisins or dried cranberries
1/3 cup toasted walnuts or pecans, chopped
1/2 cup vegetable broth
Salt and pepper to taste
1/2 teaspoon rubbed sage
1 medium acorn squash, halved lengthwise, seeds removed
Preheat oven to 400°F. Combine the bread with the crackers in a blender or food processor and puree to make crumbs. Set aside.
Heat the oil in a large skillet over medium heat. Add onions, celery, garlic and tofu and cook until onions are transparent, 4 to 5 minutes. Remove from heat and stir in the reserved crumbs, brown rice, raisins, nuts and broth. Add salt, pepper and sage and stir well.
Place squash in a 7- x 11-inch baking dish. (You may have to cut a thin slice off the bottom of the squash so it will sit up straight in the dish.) Fill squash halves with the tofu mixture, then cover with foil and bake 1 to 1 1/4 hours, or until squash is tender when pierced with the tip of a knife. Serve immediately.
