Healthy vegetarian foods?
I’m wanting to loose a bit of weight for the summer, but I also want to just start eating healthier as I don’t really have a healthy diet. I’m a vegetarian but I am a fussy eater. I don’t really like trying new foods but I want to start getting better at it. I want to start eating more fruit and vegetables, and actually enjoy it. So are there any sort of fun ways of eating healthy? Please help, thanks.xo
Zuchinni pasta / spaghetti squash. It’s a good pasta alternative. Just dress them up like you would dress up pasta (sauce, maybe some peppers, etc). Huge dose of vegetables right there
Butternut squash is pretty awesome too. Same with sweet potatoes. In fact, having things like butternut squash, sweet potatoes, corn, or any other sweet veggie is a good alternative to sugary food. If you have leftover sweet potatoes in the fridge and you’re craving something sweet, have a half of a sweet potato. It works
Vegetarian chili. I usually make meaty chili, but I also have a vegetarian chili that consists of onions, bell peppers, celery, tomatoes, yellow squash…or some other vegetables I have on hand that I feel like throwing in there. What makes the chili is the spices (chili powder, cumin, etc).
Eggplant’s pretty cool too
Anything that calls for meat, just sub it for a vegetable like eggplant etc. If it calls for chicken/beef broth, just use vegetable broth. They have this stuff at the store called “no beef.” I just used it the other day to make French onion soup, it came out awesome
